But just what is gluten, where does it come from and what can it do to the body? What other foods contain gluten? How do you know if you have celiac disease, an allergy to gluten or are gluten-sensitive? What you can do about it? Pam Cureton, RD, LDN, of the University of Maryland’s Center for Celiac Research in Baltimore has been working in this field for 19 years.
